Holiday left overs

Nope not the ones In the fridge the extra canned goods you have in the
cupboard. One great recipe I just made was pumpkin bread using the
recipe found in the joy of cooking
The joy of cooking is a go to for me when ever I cooking something new
while it is not a vegetarian cook book it has a great number of
vegetarian recipes. I added chocolate chip instead of nuts it was yummy

Slow carb salad

I recently read about the slow carb diet. It bacially eliminates any
thing whits or that can be white. Not sure what to think about this
yet but had fixing for a slow carb meal so I put it together.

Ingredence:
Pre washed organic salad greens
Cooked black eyed peas
Sliced hard boiled egg
Ginger sesame vinigrete

I think this makes a good quick snack or side .

Well It has been a year .... so have a sandwich !

So I have eaten a vegetarian plus fish or pescetarian Diet for a year. I have not really missed eating Hamburgers. a Ruben or french dip on the other hand would really hit the spot. The first meat have had was the chicken club from McDonald's. Utter Garbage truly not worth eating. Ok I ate it I was hungry. The chicken product was coated in a hard flavorless breading. The bacon it it was really bacon and not a flavored cardboard product. Really I challenge anyone out there buy a box of Morning Star Farms fake bacon cook it up. then go buy the chicken club from Mickey D's the fake bacon will be better. (actually don't buy it it's crap) On the positive point it came in a fancy box. Next Chicken sandwich I order will be from Burger King. Chicken sandwich with cheese and bacon extra mayo cut in half and please don't mess it up. I've been waiting a year for that sandwich.

Materials: aka Ingredients

Lettuce
fresh tomato
Morning star farms bacon (soy based i think)
mayo
whole gran bread
Monterrey jack cheese sliced I really like it with provolone a slice of mozzarella is good too just don't use fake cheese slices.

Methods: aka instructions
cook the bacon, cook the egg so the yoke is still runny but not really runny over easy is the term i think toast the bread slap it together like a BLT with cheese and an egg thrown in there.

Super Fast Red Bean Burgers

In need of a veggie burger fast? Last week I made some of these for Meatless Monday and they were fantastic.

Materials:
1 can red beans
1.5 cups Italian bread crumbs
1 egg
vegetable oil

Tools:
Food processor
frying pan
mixing bowl
Methods:

Drain can of beans place in food processor. Use food processor to smash beans. Don't over do it you just want them mashed not creamed. place smashed beans in mixing bowl and bread crumbs and egg. form mixture into pattys and fry. They go good with BBQ sauce. Don't have red beans ? black beans work as well. Try what ever beans you have on hand it will probably work.

Manhatan Deli


While post a few recipes that have taken me I created or found this year. Most people eat out more than I do. That bring up the vegetarian problem of finding a place that offers a good meal. While we do eat fish, I prefer to eat a more strict vegetarian diet when out and about. I feel that doing so helps raise awareness that some people want a good meatless option. You can get by veggi many places but a meatless big mac is so unsatisfying and I can make something better at home.

The Manhattan Deli on Ingersoll In Des Monies has two great meatless options. This is a sandwich shop with where they pile meat in to the sandwiches so bring your carnivore friends. They make a great veggie reuben. It is a sandwich that would even satisfy a meat eater.

The egg salad sandwich is great as well.
